These are cover pages, so they are not quite typical ones
Anyway if you want to process a cover page along with all the other pages there are two options:
1) You process all the pages with BW settings and THEN you go to the cover page and change the output settings to TIFF LZW Color=8bit (for example). These settings you may find in the "Files" tab. (See pages 1 and 3)
2) If you do not like that two steps method, then you can mark the cover page as a 'picture zone'. For example, make a rectangle selection with your mouse and then right-click on it and choose 'Create Picture Zone' from the context menu. In this case you will get some additional processing options (Zone properties from the context menu), but first of all choose your output color.
In this case when you process the book this cover page (Zone) is processed with its own settings. But anyway you will have to 'Merge Zones' in the end (Zones->Picture Zone, BTW I forgot to do that
), so this method seems to include two steps too

As to a simple way to get rid of the watermark, I used Histogram to 'cut it off' (Quality->Grey Enhance->Histogram).
